Easy Taco Chili Crockpot Recipe
Taco Chili Makes The Perfect Rainy Day Dinner
Today, it is rainy and dark. The entire week is supposed to look the same. It may not be the best week for long hikes and picnics but it is the perfect weather for chili. My guys love Mexican food so I have tweaked my original chili recipe to give it a twist and it’s so good.

I can have this Taco Chili prepped and in the crockpot in about twenty-five minutes. I love easy to make ahead meals like this. It makes the whole day less stressful when you aren’t worrying about what you’re going to cook for dinner or rushing home to get it done. Here is what you will need to make Taco Chili.
Taco Chili Grocery List
- 1 lb lean ground beef
- 1 cup low sodium beef broth
- 1/2 onion diced
- 1 -14 oz cans diced tomatoes
- 1-8 oz can tomato sauce
- 1-16 oz can Spicy Chili flavored Pinto Beans
- 1-16 oz can red kidney beans – drained
- 1-16 oz can black beans – rinsed and drained
- 1 11-oz can shoepeg corn
- 1 package Ranch dressing
- 1 Package Taco Seasoning
- Cheese for topping
- Sour Cream for topping
- Tortilla Chips
How to Make Crockpot Taco Chili
Saute your onions in olive oil in a skillet until translucent. Transfer to crockpot. Brown and drain your ground beef and add to the crockpot. Drain your kidney and black beans and add to the crockpot. You’re on a roll! Just keep at it. Add everything else to the crockpot and mix well. Cook on low setting for four to six hours. When done, simply add the desired toppings and serve with Tortilla Chips!
We like to scoop it up with the chips but you can crush tortilla chips and top it with those too! It’s really that easy! It’s really so tasty! And it freezes really good too! Enjoy!
Crockpot Taco Chili
- Saute your onions in olive oil in a skillet until translucent.
Transfer to crockpot.
- Brown and drain your ground beef.
Add to the crockpot.
- Drain and rinse your kidney and black beans.
Add to the crockpot.
- Add all remaining ingredients to crockpot.
- Cook on low for four to six hours.
- Serve topped with cheese and sour cream.
Offer tortilla chips for scooping.
